A Bake in the Life: Cinnamon Swirl Loaf

I have never really used cinnamon before in baking, except in combination with mixed spice and ginger so I really wanted to find a recipe which used cinnamon as the main ingredient. I knew I wanted to make another loaf, similar to my Banana, Date and Cherry loaf so when I came across this cinnamon swirled Allrecipes recipe I had to make it!

Cinnamon Swirl Loaf

You will need:

4 ½oz/130g Demerara Sugar

1 tbsp Ground Cinnamon

10 oz/250g Plain Flour

1 tbsp Baking Powder

Pinch of Salt

7 oz/200g Caster Sugar

1 Beaten Egg

8 fl oz/235ml Milk

3 fl oz/80ml Vegetable/Sunflower Oil

Let’s get started!

  • Begin by preheating your oven to 180ºC/350ºF/Gas Mark 4.
  • Grease and line a 9x5in loaf tin with grease proof/baking paper.
  • Prepare the cinnamon sugar swirl/topping by combining demerara sugar and ground cinnamon and set aside.

  • In a large bowl shift together flour, sugar, baking powder, salt and caster sugar.
  • Beat together milk, oil and egg, then combine with dry ingredients until smooth.
  • Pour half of the batter into the tin and sprinkle with half of the demerara sugar/cinnamon mixture.

  • Repeat with the remaining batter and demerara sugar/cinnamon mixture, swirling a knife through the layers to marble.

  • Bake in the preheated oven for 45-50 minutes (Keep an eye of the loaf, to ensure that the topping doesn’t burn but just browns. If you are concerned it is browning too quickly cover with some foil and continue to cook until a cocktail stick comes out clean from the centre of the loaf).
  • Leave to cool in the tin for 10 minutes and allow to completely cool on a wire rack.
  • You are all done! 🙂

I love the smell of this loaf baking in the oven! The combination of cinnamon and demerara sugar gives this loaf a beautiful colour and taste. Loaf recipes are always super easy and quick to bake, but require slow baking to ensure that they are completely cooked through with a crisp top. When you cut open this loaf the beautiful cinnamon/sugar swirls you created before baking become visible and give the loaf a delicious sweet flavour. I decided to top the loaf with some sieved icing sugar but you could always sprinkle on some more cinnamon sugar or just leave it as it is. Definitely try out a piece warm and spread with some butter! 🙂
